Wild Herbal Soda Recipe
A wild-fermented soda made with herbs, raw honey, and apple cider vinegar.
I know I've been sharing many tea recipes here lately, but they are so delicious and an excellent way to enjoy plant medicine!
The herbal tea recipe I'm sharing today is fermented with fruit, honey, and apple cider vinegar, creating a bubbly herbal soda full of wild microorganisms and gut-supporting probiotics.
If you love herbal tea and fermenting, this is a recipe you must try! This basic recipe uses dried ginger and orange peel (I love this combination), but you can use a variety of medicinal herbs in this soda recipe!

Wild Herbal Soda Recipe
Components:
Dried Herbs: I used ginger root and orange peel for digestive support. Ginger and orange also pair well together and make a lovely tea blend.
Raw Honey: Raw honey contains wild yeast that help with fermenting this wild soda and lightly sweetens the beverage.
Organic or Wild Fruit: The fruit's sugars help feed the wild yeast. This ingredient is optional, but I suggest adding some fruit to help speed up the fermentation process. Â
ACV or Lemon Juice: I always have a better batch when I add acid to my wild soda, but it's an optional ingredient.
Ingredients
1/2 gallon spring or distilled water
6 tablespoons dried herbs (or 12 tablespoons fresh herbs)
1/4-1/2 cup chopped fruit (optional)
1/2-1 cup raw honey*
1 tablespoon apple cider vinegar or lemon juice
*raw honey doesn't always dissolve well in cold brew, so I poured warm water from the kettle over it and let it dissolve and cool before making this soda.
Instructions:
Dissolve honey (optional): Warm 1 cup of spring water in a kettle and pour the warm water over the honey. Mix and allow the honey to dissolve into the water and cool to room temperature.
Clean and sterilize a 1/2 gallon jar.
Add the herbs, fruit, vinegar, and honey to the jar.
Cover with remaining water and secure tightly with a lid.
Allow the tea to ferment at room temperature for 2-3 days.
After 48 hours (but you can go longer if you like), strain the herbs and fruit from the soda.
Pour the soda back into the jar and secure it tightly with the lid.
Allow the soda to ferment for 1-2 more days.
Once the wild soda is bubbly, it's ready to drink and can be refrigerated.
Serving Ideas:
The soda may be tart, depending on how much honey you use. I like to add a few tablespoons of oxymel to the soda to add a touch of sweetness and more herbs! My spearmint and lemongrass oxymel is a tasty oxymel that pairs well with this ginger and orange soda.
