Rosemary Wild Soda
Rosemary soda is made with fresh rosemary sprigs, water, and sugar. Like many ferments, this recipe uses microbes present on plants to create a fermented soda.
I have several ferments in my kitchen at the moment. Beet kvass, kombucha, and wild soda!
I shared my herbal tea wild soda recently, which uses dried herbs, fruit, and apple cider vinegar to make an herbal soda. Today, I'm sharing a recipe for making rosemary soda. The process is similar to other ferments and relies on the microbes in plants to ferment rather than an added culture.
My next ferment will be Pine Soda! I make it every winter with fresh pine needles I find hiking. I will share that recipe in a few weeks.

Rosemary Wild Soda
Ingredients
1 quart filtered water
1/4 cup sugar or honey
4-5 sprigs of fresh rosemary
Instructions:
Mix the sugar and water in a clean quart-sized mason jar. Shake well.
Add the rosemary sprigs and cover with more water if needed.
Secure the jar with a lid and put it in a cool, dark place for 3-4 days.
Burp the jar daily to release pressure.
After 3-4 days, strain the rosemary from the jar.
(Optional) Pour the fermented soda into sping-top jars to ferment a second time. This will result in a more bubbly soda. You can add other herbs or fruit to flavor the rosemary soda on the second ferment. I like to add fresh ginger or berries.
After 3 days, the soda will be ready and stored in the refrigerator.
