Summer Fruit Salad with Mint & Honey
A delicious fruit salad recipe with fresh seasonal ingredients and topped with lime, honey, and mint.
This cooling fruit salad combines fresh fruit and is topped with lime juice, raw honey, and fresh mint.
If you have an overflowing amount of mint growing in the garden, this fruit salad is a great way to use it. I also add mint to all my tea, as it's cooling and refreshing to sip on during these hot summer days.
I've been making large batches of this fruit salad and enjoying it with all my meals. My children have also enjoyed having it on hand to snack on between meals and with their breakfast.
I love to make large batches of everything I make so I can enjoy them longer (and cook and prep less for the rest of the week).
Summer Fruit Salad with Mint & Honey
Ingredients:
1 pineapple, chopped
2 cups of washed grapes, cut in half
2 cups of strawberries, chopped
2 kiwis, chopped
2 tablespoons fresh mint, chopped
1-2 teaspoons of raw honey or agave
Juice of 1 lime
Instructions:
Rinse, dry, peel, and chop the fruit.
Combine the chopped fruit in a large bowl.
Top with fresh mint, honey, and the juice of one lime.
Mix the salad to combine and store in a container in the refrigerator (I use these weck jars for storing my fruit salad).
